Hello and welcome back to genus hour. For this final week of genus hour i will be making a meal called the cowboy dinner which consist of a casserole made of cornbread, beef, and beans. This dish is describe as "cowboy dinner is a hearty casserole of flavorful beef, corn and beans topped with soft, fluffy corn bread and a layer of cheese. Very delicious!" It definitely sounds like a good way to wrap up genus hour.
Sense this is a dish without much information or history i will be going over the history of the corn bread in the dish seeing as it is one of the most needed ingredients. Corn bread was one of the earliest meals in Americas history. American Indians learned early on to dry and roast corn and grind it down to make bread,cakes, and porridge. This process and the dishes that came with it helped the colonists who came to america survive the harsh first years. Corn bread is also known as johnny bread from a suspected incorrect translation. Its believed by some historians that the original name was "shawnee cakes" from the pawtuxet Indians, and English settlers mispronounced it as johnny cakes. Now that we have reviewed some history let move back to the dish we are making. To start the cowboy meal, First pre heat the oven to 375 degrees and lightly grease the pan you will use for this meal. Next set a large skillet over medium heat and cook the ground beef, onion, salt and pepper together until the beef is fully cooked, then drain the grease from the pan. Once its all done simply add corn bread to the beef and mix it up. and there you go you have your cowboy dinner.
