Hello and welcome back to genus hour. For this final week of genus hour i will be making a meal called the cowboy dinner which consist of a casserole made of cornbread, beef, and beans. This dish is describe as "cowboy dinner is a hearty casserole of flavorful beef, corn and beans topped with soft, fluffy corn bread and a layer of cheese. Very delicious!" It definitely sounds like a good way to wrap up genus hour.
Sense this is a dish without much information or history i will be going over the history of the corn bread in the dish seeing as it is one of the most needed ingredients. Corn bread was one of the earliest meals in Americas history. American Indians learned early on to dry and roast corn and grind it down to make bread,cakes, and porridge. This process and the dishes that came with it helped the colonists who came to america survive the harsh first years. Corn bread is also known as johnny bread from a suspected incorrect translation. Its believed by some historians that the original name was "shawnee cakes" from the pawtuxet Indians, and English settlers mispronounced it as johnny cakes. Now that we have reviewed some history let move back to the dish we are making. To start the cowboy meal, First pre heat the oven to 375 degrees and lightly grease the pan you will use for this meal. Next set a large skillet over medium heat and cook the ground beef, onion, salt and pepper together until the beef is fully cooked, then drain the grease from the pan. Once its all done simply add corn bread to the beef and mix it up. and there you go you have your cowboy dinner.

Hello and welcome back to another week of genus hour. This week Im gonna be making something I personally have never heard of which is a taco soup. I love taco based foods I love normal tacos , taco salad , taco flavored chips , cheese tortilla tacos , and maybe more that i couldn't remember at the time of writing this, but a taco soup? That is a very new type of taco dish for me so much so that ive never heard of it. Which leads us to our next section of genus hour , looking at some history of the dish. Unfortunately i couldn't find any information on the soup specifically so I will be going over some history of tacos themselves.
Tacos are thought to originate in mexico long before the spanish came to america. They started out as corn tortilla shells filled with fish and cooked organs. It became a staple meal that provided a good sum of nutrients to anyone who had them. It turns out we have tacos here thanks to immigrants looking for work in the U.S. Another fact about tacos is that taco actually means light lunch in English even tho many Americans eat them for dinner not lunch. It turns out the famous Joey Chest nut even has a world record for eating the most tacos in 8 minutes which was 126 tacos! Now that we have reviewed some history of the taco itself lets move on to making the taco soup we are here for. First step is to get a medium skillet and fill it with some ground beef. Then just let the meat sit until it has browned and drain just a bit of the other ingredients used to brown the meat. Once that is done you can add whatever you want based on your taco preference including but not limited to onions, chili beans , kidney beans, corn, tomato sauce , diced tomatoes, green chili peppers, and taco seasoning. once added mix it all in a low cooker and let it sit on the low setting for 8 hours. Once that time period is up congratulations you now have a taco soup, enjoy! Hello again and welcome back to another week of genus hour. Today i decided to make a dish i personally love but never had a chance to make called chicken and dumplings. When i went to New York a few weeks ago i went to eat at a restraint with my cousins and I tried their chicken and dumplings and they were delicious. So that inspired me to make chicken and dumplings for this weeks dish and hopefully recreate the magic of that glorious dish.
As always i will go over some history on the dish and then go over my process of making it. So where better to start then its origin? Sources say that this dish originated in southern united states during the antebellum era. It was considered a mainstay during harsh economic times. One of the earliest versions of the recipe was cornmeal dumplings cooked with turnip greens.Dumplings themselves have been around and served with some kind of meat for centuries. This dish is related to boiled puddings that have been a staple of European cooking sense before america was colonized. These dishes originate back at least 1600 they have been in american cookbooks sense then. Now to move on to the actual dish and how i cooked it. First to prep the chicken i simply put the chicken in a pot with broth, water, and a can of cream chicken soup, Once it is all placed in the pot I brought the pot to a boil and covered it while i prepared the dumplings. For the dumplings i grabbed another large bowl and put self rising flour, water and let it sit until i could roll it out into little balls and cut them into strips. Once that's done I added the dumplings to the broth and chicken to simmer for 20 minuets. I added a little salt and pepper too for taste. unfortunately i ate them before i could take a picture so here is one i found. Hello again and welcome back to another weekly cooking for genus hour! For this weeks dish i am going to make pierogi's. Pierogi's are filled dumplings made by wrapping unleavened dough around a savory or sweet filling to then be cooked in boiling water. It sounds almost as good as it taste but we are not here to listen to me talk about its flavor.
Lets review some history on these delicious dumpling's. The original pierogi and where it originated is disputed to this day and difficult to tell. The only thing we know is that the word pierogi first appeared in polish cook books and literature in the late 17th century. Claims of the origins of the dumpling have been made by Poles, Romanians, Russians, Lithuanians, Ukrainians, and Slovaks. Pierogi's are also a culinary link to Pittsburgh introduced to the location by immigrants who came to the area. Now that we know everything their is to know on these dumpling delights lets move on to the recipe. So first things first is to prepare the dough. To make the dough we are going to add salt,flour,half a cup of hot water,and begin to mix the ingredients in a bowl while adding some melted butter. One the ingredients are mixed well we let the mixture sit for 5 to 7 minutes then wrap the top with foil at room temperature for 30 minutes. Next is to prepare the filling with chopped potato's,cold water,and a pinch of salt.While that cooks i added onions to the mixture for the dough and stirred until it were nice and golden . Next once everything is ready i simply laded out the finished wraps and put the filling in. Im afraid i cannot upload a picture of the finish product because i ate them to quickly. so i have found a picture to show you the finished product. Until next time! Hello again and welcome back to genius hour! spring break has been a week of sleeping and gaming for me but now to kick off the dust and get the week started why don't we cook something? This week I am gonna cook or should i say bake pizza logs. Pizza logs originated in western new York and from the sound of it is as common as the easy to find as a hot dog stand. The pizza roll was invented by Jeno Paulucci. How it happened was Jeno replaced the traditional filing of a Chinese egg roll with pizza toppings. The product was allegedly created in 1960. Currently the pizza log is owned by a man named Jason Corvoda. This was all i could find on the pizza roll so why don't we get to the cooking part of this project and we can resume the research next time. Alright so this recipe is very easy which makes this much simpler to explain then other recipes so far. So lets just jump into it with what we need. For the recipe we need pizza sauce, pepperonis,won ton wraps, and a type of cheese for this recipe i just used mozzarella cheese sticks. Shown below is what i used specifically. Now onto the steps to the finished product. First and foremost before we start their are a few ways to cook this recipe you can ether bake them in the oven at 350 degrees for 10 minutes or fry them in a air fryer. For this protect i decided to do both. Now onto cooking, First i layed all the wraps needed out while i prep everything else. For this recipe i wrapped the cheese sticks with the pepperonis before placing them in the won tons. Then i simply wrapped the won tons to bake and fry them. this recipe was short and easy but tasted actually pretty good. Below is the finished product.
This week i decided to start earlier in the week because i had a recipe i found last week i have been wanting to make. The dish is called a cream cheese wonton. This dish is a dumpling with a savoring filling and is very good when made correctly. This dish actually originated in A restaurant called Trader Vics located in San Francisco in 1950. Trader vics was a popular chain of Polynesian-style tiki-themed bars. It is a common misconception that these are a Chinese dish but it turns out that the only thing authentically Chinese about these wontons is the wrapping. Now that we have a little back ground information about this dish lets get to the ingredients. The ingredients for a full 24 consist of wraps,chopped chives,cream cheese,olive oil,garlic, miced onion, Worcestershire sauce, and some kind of pan to cook them in. This week the best pan i could find was a cupcake pan so lets see how well that worked out shall we? the image below is the ingredients i have described here. Now to start on the cooking as is usual for every dish i pre heated the oven to 325 degrees. This dish was surprisingly straight forward because next you just have to mix everything together. 8 ounces of cream cheese, teaspoon of minced onion,half a table spoon of garlic powder,half a table spoon of chives,a pinch of salt,and a table spoon of Worcestershire sauce. Once mixed i sprayed non stick spray on the pan and placed the wrappers to be filled. Each wrapper takes half a table spoon of the mixture. Once all of that is done we use that famous pre heated oven and bake the wontons for 8 to 10 minutes. Below is a picture of the finished dish. Over all this was a nice dish not to complex. Personally it is not my favorite but the others in my family liked it so i will take their opinion over mine.
This week I have decided on making ham and cheese sliders. It is not difficult to make but they look very good. The melted cheese running down the ham just puts a taste in your mouth before you even bite it. Its almost like when you see your favorite dish and you just wanna devour it, it puts such a craving in your mind. so you know why i feel this way I will put the picture below that i am describing. As you can see this dish looks a great and I hope to make it taste great to. Their are not a lot of ingredients for this dish all it requires is butter, Dijon mustered, Worcestershire sauce, minced onion, poppy seeds, and last but not least ham, cheese, and bread. Before I start as always I pre heat the oven, this time it must be heated to 335 degrees. To start I let the butter melt then mix it with everything and let it sit. When it all mixed you place the first layer of bread. My choice for the bread was kings Hawaiian rolls simply because they were the right size. Once the layer of bread is placed I started placing each layer first a ham layer, then a cheese layer, and one final ham layer before placing the bread on top. Then i put the mixture of butter, Dijon mustered, Worcestershire sauce, minced onion, and poppy seeds from before on top of it before cooking it for 20 minutes. We will be back after it has cooked and settled. Above is an image of the finished product and it looks great. The bread is nice and fluffy and the cheese has melted just right with the ham. Overall i think this was a great dish it wasn't overly complex and delivered what was expected a bit size ham and cheese. I am happy with this dish.
This week i decided to make a Moravian chicken pie. I decided sense i was absent and already had the ingredients i would get started and make the dish Wednesday. The ingredients for this dish are 2 pie crusts,butter,flour, chicken broth, evaporated milk, cooked chicken, salt, and pepper. The ingredients are shown below. ![]() Before i started making the dish i preheated the oven to 425. While the oven heats up i put a pan on the stove to melted six tablespoons of butter and added six tablespoons of flour to it. Next up was one table spoon of salt and a fourth tablespoon of pepper for taste. Next i added a one and three fourths of a cup of chicken broth. Then i added the half n half, also known as evaporated milk. While that marinated i prepared a pot and put it on the stove for the chicken. I filled the pot with boiling water and let the chicken boil for about thirty minutes. Once the chicken was done i tore the chicken off the bones (also known as mincing ). When the chicken was all torn off i placed it into the pan with the rest of the ingredients . I stirred and cooked it until it thickened nicely. Once thickened I poured the chicken mixture into a pie shell while cutting the other pie shell into strips for the top crust. Then i placed it into the oven to cook for about thirty five minutes. We will be right back after it cooks. After about thirty minutes i took out the chicken pie and let it sit it to cool down before cutting it. Below is the finished product. This dish came out pretty well as one of the first pies i had ever made. As for how its tastes the salt and pepper did wonders on making this dish come out delicious. Of all the dishes i have made so far this is definitely one of my favorites.
For this weeks dish im going to be making a quiche. A quiche is a pie crust filled with eggs,cheese,and anything of your choice. Their are many ways to make a quiche it is not a specific set of ingredients, you can make a quiche with vegetables, fruit, anything you would like to add can make quiche. This is a mean most commonly served as a brunch not quite dinner not quite lunch. below is a picture of the ingredients i will be using for this quiche. For the quiche i want to use cheddar cheese, diced ham, and spring onions. Instead of making the crust i bought one with the ingredients just to save time. Before i started i preheated the oven to 400 degrees and baked the shell before putting the ingredients in. While the crust baked i mixed five eggs,1/4 cup of heavy cream, 1 1/4 cup of chopped ham, a cup of shredded cheese, 1/3 cup of chopped onions, and salt n pepper for taste. For this recipe you make the filling while the crust bakes. once the crust was finished baking i pored the filling in and placed the quiche in the oven until the center is barley set. I set it for around 45 minutes so we will be right back after this is done. The quiche is done and had browned to be nice and crisp. Below is an image of the finished dish. compared to last weeks dish this seems much more appealing to the eye. This dish also has more common ingredients unlike last weeks dish which included Doritos. The ingredients used for this dish basically made scrambled eggs with a pie crust which was unusual but good.
For this weeks dish i decided on a Dorito Casserole recipe which is just as it sounds. A Dorito casserole is layers of crushed Dorito chips, ground beef, and cheese sauce. The description of the recipe is ¨Every bite has the perfect amount of chip, cheese, and meet in it!¨ As a extra desert and a make up for last weeks missed dish I will also be making Cream cheese mints which is also just as it sounds a mint made of butter, cream cheese, and prouder sugar. Here is a quote on the dish from the my mother ¨They are a heart attack waiting to happen but they are really good!¨ I decided to let her pick the second dish to make up for the first and she asked for them. we got the ingredients today as shown by the picture bellow. To start I grounded the beef in a frying pan and added taco seasoning. once it was all mixed together I added a can of cheddar cheese soup, a can of cream chicken soup for thickening, evaporated milk, and diced green chills for small hint of spice. While this took place I sprayed the bottom of the bacon dish I am using with non stick cooking spray and added the Doritos i had previously crushed up. Unfortunately as shown in the picture above my assistant was tired so i decided to let her nap while i proceeded to the next part of the dish. For the next step i added the beef on top of the Doritos with a layer of cheese. After that i put it in the oven and let it cook. The picture below is the finished product. I will admit It does not appeal to the eye but it was a good meal as both of my parents have stated. With the first dish out of the way i started on the second dish which had already been started while the first dish cooked in the oven. I had placed cream cheese and butter in a mixer until it was creamy and smooth. I then added prouder sugar, vanilla, mint extract, and a bit of food coloring for my mother.
